This is an easy way to enjoy the flavors of fresh tomatoes during the summer seasons. Mixing different varieties of tomatoes is the best way to enjoy the subltle favors. My mom made this on a recent family beach trip, and it was a hit!
Ingredients
- 2-3 pounds tomatoes (about 3 cups chopped) for best results use a variety, heirloom, grape, beefsteak, plum, etc
- 1 medium onion coarsely chopped
- 2 cloves garlic, minced
- handful of fresh basil, coarsely chopped
- Salt and pepper to taste
- 1-2 tablespoons olive oil
- Sliced toasted french bread
Instructions
- Saute onions and garlic in olive oil until translucent
- Add chopped tomatoes and saute until soft and starts to carmelize
- Add salt and pepper to taste
- Toss in fresh basil and stir another minute
- Spoon on top of toasted french bread
