Avocado Egg Salad

Serves: 2-3 sandwiches
  • 3 hard boiled eggs, diced
  • 1 medium-sized avocado, mashed
  • 1 stalk of celery, chopped
  • salt and pepper to taste
  • toasted wheat bread slices or lettuce leaf
  1. Mix eggs, celery, and avocado into bowl.
  2. Mash until all ingredients are blended.
  3. Add salt and pepper to taste.
  4. Scoop on top on a slice of wheat bread or leaf of lettuce
