Serves: 2-3 sandwiches
- 3 hard boiled eggs, diced
- 1 medium-sized avocado, mashed
- 1 stalk of celery, chopped
- salt and pepper to taste
- toasted wheat bread slices or lettuce leaf
- Mix eggs, celery, and avocado into bowl.
- Mash until all ingredients are blended.
- Add salt and pepper to taste.
- Scoop on top on a slice of wheat bread or leaf of lettuce
